Jack LaDuke tells us about a new maple and birch syrup operation that has opened in Lyon Mountain, New York, a former mining and prison town in the Adirondacks. The new facility has hired 28 workers. Jack also takes us to the Cornell Maple Research facility in Lake Placid where they are doing cutting-edge research into breeding a variety of maple tree that increases the sweetness of the sap, and in turn, could help increase production for maple producers in the Adirondacks.
